What does a hue rotation of 180 degrees do?

It shifts each hue by half a turn, so colors move to the opposite side of the color wheel. For example, a red area may appear cyan, and a blue area may appear yellow. Neutral grays stay nearly unchanged because they have little visible hue to rotate.

Can I restore the original colors after rotating?

No, hue rotation is not reversible. It changes the overall color relationship and does not restore original colors or white-balance a photograph. Keep the source file and judge skin tones, logos and gradients in the generated preview before replacing the original.
